Description of the Festival

Bread has characterized the history and culture of Tuscany, has always been the staple food of all walks of life and the work has been characterized by precise rules that connote the social organization and the daily life of the people. In all the farmhouses, even the poorest, could not miss the wood oven for cooking and the cupboard or "bread crate". Today, Tuscan bread retains the same shapes as in the past with the chiaroscuro crust and the compact, crumbly crumb good to accompany salami but also with jam on it. Founded in 2002, the festival aims to enhance a product that can be used to create different dishes as it was in the local tradition: from panzanella, pappa al pomodoro, to acquacotta.

PANZANELLA: Ingredients: Unsalted Homemade Bread (better if gray); Onion; Cucumbers; Basil; Ripe tomatoes; Vinegar; Salt; Pepper; Oil. Take un-salted home-made bread, better if it is gray, ie from stone-ground flour and sparse loaf. Cut it into slices and put it to soak in the cool water where you have poured some vinegar. When it is well soaked, squeeze it very hard with your hands, making sure that there is not even a drop of water. Put it in a salad bowl crumbling it, sliced ‚Äč‚Äčover it plenty of onion, cucumber, ripe tomatoes, basil leaves rote with your hands, salt, pepper and plenty of oil. Stir and leave to cool for at least an hour.
